Datepicker doesn't display the right date format in french

In the backoffice, when selecting start and end dates of a process, the date format is %m/%d/%Y when french locale is activated, whereas it should be %d/%m/%Y. French datepicker locale is ok in fr.yml. I checked on the staging platform and the format is %d/%m/%Y no matter the language (english, català, castellano) Don't know if it's a bug or a misconfiguration on our side though !
